29 Days of Honey – Elul 5781 – Honey-Baked Salmon

I’ve challenged myself to post 29 honey recipes in the next month – BEFORE Rosh Hashana.

Not just your Bubbe’s honey cake. As a beekeeper and avid cook, I can take you and your honey places you’ve never been before- culinarily speaking.

Do bees diet?

HoneyBees weigh approx. 121mg. That’s an average, so some are smaller or larger than others. About 300 bees will fit in an adult’s cupped hands. (It tickles by the way). Although we think of bees as honey-eaters, they can’t actually digest honey straight-up. They need to dilute it with water first. Bees actually need a pretty varied (vegetarian) diet to get all the proteins, vitamins, minerals, amino acids, and yes- calories necessary for their health and survival. Their diet is determined by what’s in their immediate (5-8 km ) foraging area. There is no, “I’ll just have a PB&J” alternative.

What do adult children and a plague of locusts have in common?

Forgive the abstract nature of the question, but speaking of eating patterns… Today we were descended upon rather spontaneously by an adult child. I hope that’s clear. We have children. They are adults and do not live at home (at the moment). But when they spontaneously appear, the refrigerator becomes magically vacant. Fortunately, we had some warning and managed to have lunch while there was still some sustenance available.

Here’s what we had:

Honey-Baked Salmon

It was leftover BTW, and equally good warm or cold.

What you’ll need:

  • 4 Salmon filets – about 500g total
  • Whole grain mustard – about 2 tablespoons
  • Soy sauce- about a tablespoon
  • 30-50g honey
  • Thinly sliced red onion
  • Dill sprigs
  • Oven proof container with cover, or foil

How to do it

  1. Preheat oven to 190c
  2. Spread onions over the bottom of your cooking vessel
  3. Park the salmon filets on top of the onions
  4. Sprinkle soy sauce over filets
  5. Shmear the mustard evenly over the fish
  6. pour the honey over everything
  7. Cover and bake for 18 minutes – no more, or your fish will become irretrievably DRY
    1. no sauce in the world can compensate for dry fish or chicken
  8. Garnish with dill sprigs

Enjoy! Right away is good (we made ours last Friday). Leftover is also good. Before the locusts descend is best.
